In a small saucepan (or microwave-safe bowl), heat the chocolate and peanut butter on low heat until the chocolate it melted, stirring constantly. Stir in vanilla extract. Pour the mixture over cereal. Stir gently until evenly coated. Let the cereal come to room temperature for about 5-10 minutes. Once cooled, pour the mixture into a large container with a lid or 2-gallon resealable storage bag. Add the monkfruit powdered sugar. Seal and shake until well coated.
